Why this blog exists

Somewhere around 2014, I had a small but stubborn realization: the coffee I was brewing at home tasted nothing like the petit noir I’d order standing at the zinc bar of a Paris café — or the espresso al banco I’d knock back in 30 seconds in a Roman bar.

Same beans, roughly. Same water. But the version at home was thin, sour, often bitter, and frankly forgettable.

That gap bothered me enough that I started experimenting. One method, one piece of gear, one variable at a time. Over the next decade, I worked through pour-over rabbit holes, AeroPress recipes, cold brew ratios, espresso dial-in obsessions, and far too many grinders. I made a lot of bad coffee. Some of it was educational. Most of it was just bad.

What I learned is that great coffee at home isn’t about owning a $3,000 espresso machine or memorizing a barista certification curriculum. It’s about understanding a small number of things that genuinely matter — and ignoring the marketing noise around the rest.

Mastering Coffee exists to share that filtered-down knowledge. The goal: help you make specialty-quality coffee in your own kitchen, without buying gear you don’t need or learning techniques that don’t move the needle.

Who I am

I’m Patrick Astoul. I’ve been seriously brewing coffee at home for over a decade — primarily espresso and pour-over, with a permanent rotation through AeroPress and cold brew depending on the season and the morning.

I’m not a certified barista. I haven’t worked in a café. What I am is someone who has spent the last 10+ years testing what actually works — at home, with a real budget, in real time, every single morning.

That’s the lens I write through. If a piece of gear or a technique only makes sense for café professionals, I’ll say so. If something cheap performs as well as something expensive, I’ll say that too.

My current setup

For anyone curious about what I actually use day to day:

  • Espresso: a De’Longhi espresso machine — nothing flashy, just a reliable workhorse that’s pulled thousands of shots
  • Grinder: an older manual grinder I run single-dose, because consistency matters more than convenience
  • Pour-over: a stovetop gooseneck kettle and a basic kitchen scale — no Acaia Pearl, no Stagg EKG. They’re nice. They’re not necessary.
  • Methods I use regularly: espresso, pour-over, AeroPress, cold brew

I mention this for one reason: every recommendation on this site comes from someone whose own kitchen looks pragmatic, not aspirational. If I tell you a $30 grinder will hold its own against a $200 one for French press, it’s because I’ve used both for years.
